Perfect Healthy Brittle

It's the middle of the day and your tummy is starting to ache for some food. Normal? Yes, totally normal.

Rather than heading to the vending machine and eating junk, indulge in a few pieces of this delicious Almond Brittle.

Made with simply 4 ingredients, super healthy, packed with protein, and will keep you nice and full for a good 2-3 hours.

Make it the day before and bring it to work if necessary. Recipe below.


- 1/3 cup coconut oil, melted

- 1/3 cup slightly warmed almond butter (may use peanut or cashew butter)

- 2 tbsp coconut flakes

- 2 tbsp honey


Combine in one bowl 1/3 coconut oil, almond spread, coconut flakes and honey. Pour mixture onto a tray lined with baking paper. Sprinkle with a pink of rock salt and a pinch of grated dark chocolate. Freeze 20 minutes - and voila! Snap them into bark and enjoy.
