Bombshell Salads


Turn a sad salad into a bombshell because salads really don’t have to be boring.

There are all types of salads you can create including green salads, potato salads, pasta salads, and more. But right now I’m talking about green salads. How do you turn a sad green salad into what I consider a bombshell salad?

1- Mix and match greens. Think arugula, spinach, romaine, escarole, endive, and kale… The varieties are endless. Mix those greens!

2- Combine textured fruits/vegetables into your salad. Shred carrot into your salad, throw in mushrooms, sliced onions, diced tomatoes, shaved zucchini, avocado, snap peas or beets. Textured veggies make your salad more interesting with all the different flavors and textures. Crunch away!

3- Throw in grains. Whole grain pasta? Pinto, black beans, garbanzo beans? Continue adding texture to your salad by tossing in a handful of healthy grains or beans. These grains add fiber, protein, and almost complete that bombshell salad.

4- Nuts. Sprinkle in some almonds, walnuts, cashews, peanuts, or whatever nut it is you love. A crunchy nut not only adds minerals, but protein and fiber into your salad.

5- And the best for last, protein. Whether it is grilled chicken, turkey, salmon, tuna, or whatever protein you can get your hands on at the time, add it to your salad to create the ultimate bombshell salad. Now your salad has greens, textured veggies, avocado, grains, nuts, meat/fish… what else can you add to this salad? Dressing!

Avoid creamy dressings; they’re for the most part high in saturated fat. Opt for balsamic vinaigrette and olive oil, or freshly squeezed lemon with olive oil. Olive oil is high in omega 3 and 6 and perfect for dressing your bombshell salad.
